1st Course

*Langostinos Crocantes: Four crispy wonton wrapped shrimp with aji aioli casero & sweet Thai chili sauce

*Champinones Hauancaino: Crimini mushroom caps stuffed with huancaína, aji amarillo, queso blanco, Peruvian olives & truffle oil with grilled toast

*Lomito Kolantao: Pan seared beef tenderloin wrapped in tender snow peas with majado de camote & garlic-soy sauce reduction

 

2nd Course

Aquadito de Pollo: Chicken soup with vegetables and rich cilantro broth

Ensalada Pacifica: Baby spinach tossed with mandarin oranges, candied almonds, papaya, sundried cranberries & cilantro-honey vinaigrette


3rd Course

Pollo Enrollado: Chicken roulade stuffed with creamy herbed cheese, basil, aji amarillo & bacon. Served with parsnip puree, herb roasted vegetables & piquillo crema.

*Corvina Chiclayo: Pan seared corvina filet coated with tomato-herb pesto. Served with truffled quinotto, arugula, sundried tomatoes & citrus-aji amarillo sauce.

*Conchas Andinas: Pan seared sea scallops with butternut squash risotto. Served with grilled asparagus, rocoto aceite & cilantro aceite.

*Lomo a lo Pobre: Grilled beef tenderloin served with grilled pearl onions, plantanito frito, tacu-tacu, rosemary-red wine demi-glace & a fried egg.

Tallarin de Vegetales con Rocoto Relleno: Fettuccine tossed with herb roasted winter vegetables, butter, white wine, basil and green olives. Served with a rocoto pepper stuffed with savory rice & cheese.

 

4th Course

Suspiro Limena: Caramel custard topped with port scented meringue
